The apricot is above all well supplied with pro-vitamin A, as evidenced by his beautiful orange color. The apricots must be purchased to-point, soft to the touch, fragrant. Do not rely on the color of the apricot to assess maturity: some varieties "blush" long before it was ripe. The scent of the fruit and flexibility are better criteria. Once picked, it ripens more! Interestingly, if possible, read the label on the package and indicates the origin, type of product, variety, size, number or net weight.
Reject any apricot a little soft, shriveled, stained or injured and those whose color is slightly green: they are tasteless.
